Easiest 5-Ingredient Candy Corn Meringue Cookies Ever—Haute Halloween!

/ Wednesday, October 23, 2013

I came up with these Candy Corn Meringue Sandwich Cookies out of laziness. Like most sweet-loving gals in the world, I'm obsessed with French macaron cookies (not to be confused with macaroons) but don't have the patience to make them—they're tricky! Regular meringues are far more straightforward and only require a few ingredients.

The candy corn "bases" and "tops" are made out of meringue (half dyed yellow), then filled with store-bought frosting (dyed orange) to keep things simple. If you have time, by all means make your frosting from scratch. This Quick Buttercream Frosting recipe is my favorite. Or, if you're willing to splurge on 1 extra ingredient, stir 1/4 teaspoon pumpkin pie spice into the frosting.

The recipe for these 5-Ingredient Candy Corn Meringue Cookies is on Leah's blog—head on over these and make sure to let me know what you think! xo Erin
